Custom Mini Donut Trailers

Built around the automatic mini donut machine, with the Type 1 hood and county-ready interior the health department signs off on.

Custom Mini Donut Trailer by 916 Concession

A mini donut trailer is one of the cleanest high-margin builds in the fair and festival circuit. The whole operation runs off one centerpiece: an automatic mini donut machine that deposits, fries, flips, and dispenses hot mini donuts in a continuous loop while the crowd watches. Pennies of batter and sugar turn into a $6 bag, and the smell does half the selling. 916 Concession builds these units custom out of our Sacramento yard for operators all over California. We frame the layout around your specific machine, drop in a Type 1 hood over the fryer, and finish the box with county-approved cleanable cladding and the plumbing your inspector expects. You bring the menu and the route; we hand you a unit that carries an HCD insignia and is ready to chase the season.

What a Mini Donut Trailer needs

The centerpiece is an automatic mini donut machine, typically a Belshaw Donut Robot or a Lil' Orbits SS1200 or SS2400, which deposits, fries, flips, and discharges donuts continuously, with smaller models like the Lil' Orbits 800 for tighter boxes or lower volume. Around it we build a batter prep and hopper station, a sugar-and-topping bar for cinnamon sugar, glaze, icing, and dry toppings, and a finished service counter at the window. Because there is hot oil involved, the fryer station sits under a Type 1 exhaust hood, usually 5 to 7 feet, often paired with a fire suppression system depending on your county. Standard plumbing is a three-compartment sink and a separate handwash sink, fed from a fresh-water tank with a matched waste tank. We round it out with refrigeration for drinks and dairy toppings, dry storage, and shelving sized to your event load.

Mini donut machines are electric, and the model decides your draw. A single mini donut unit commonly runs on 110V, but higher-volume and dual-machine setups push you toward 220V circuits, so we wire to your equipment list rather than guessing. We build the trailer generator-ready with USA-compliant fixtures so you can plug into shore power at a venue or run off a generator on the circuit. Water is self-contained: a food-grade fresh-water tank feeds the three-compartment sink and the handwash sink through a pump, with hot and cold at the faucets, and a separate waste tank sized to match so you are not dumping mid-shift. We size both tanks to how you actually vend; long fair weekends with no hookups need more capacity than a few hours at a farmers market. Give us your machine model and your typical event and we spec the electrical and water to match.

Why mini donuts move on the fair and festival circuit

Mini donuts are a near-perfect event treat: low food cost, fast ticket, impulse buy, and a machine that doubles as a stage. People stop because they can see the donuts dropping into the oil and rolling out the other end. That visibility is the product. The buyers we build for are county fair vendors, festival and farmers-market regulars, sports-venue concessionaires, and first-time food entrepreneurs who want a single-focus menu they can run with two people. A mini donut trailer does not need a deep menu to make money. Hot donuts, a few toppings, cold drinks, and a busy weekend is the whole business model, which is exactly why operators ask us to build the box tight, mobile, and fast to set up at each stop.

Building around the donut machine, and sizing the box

Everything starts with the machine. An automatic unit like a Belshaw Donut Robot or a Lil' Orbits SS-series sets your counter height, your hood length, and your power draw, so tell us the exact model before we cut anything. We frame a dedicated machine station with clearance for the discharge tray, then lay out the batter prep, the sugar and topping bar, and the service window so one person can run the line without crossing paths. Our most-ordered shell is a 7x14, which comfortably fits the machine, a topping station, sinks, and a service area with room to move. But 916 builds any size. If you only run one machine at small events, a shorter box keeps you nimble; if you are pushing volume at major fairs, we go longer and add a second machine or a holding station.

Two approvals: the unit versus your health permit

There are two separate sign-offs, and operators mix them up constantly. The first is the HCD insignia: that is the unit itself, built and inspected to California Title 25 as a registered mobile food prep vehicle. That is 916 Concession's job. We build to spec, and the unit carries its insignia when it leaves the yard. The second is your county health permit, which is the operating license for your business in the county where you vend. That step is yours. We make it as smooth as possible by delivering county-ready blueprints and a unit built to what inspectors look for: the Type 1 hood over the fryer, a three-compartment sink, a separate handwash sink, and cleanable, county-approved interior cladding throughout. You take the package to your county health department; we make sure the trailer has nothing for them to flag.

Timeline, registration, and getting it to you

A typical custom mini donut trailer runs about six weeks from approved drawings to finished unit, though that depends on inspection scheduling, which we cannot fully control. We handle California registration end to end. In California the DMV issues temporary tags first, then mails permanent plates, and 916 Concession manages both stages so you are not standing in a DMV line. When it is done we run delivery through our in-house transport, the same crew we use on every build, so your unit shows up on a schedule instead of whenever a load board picks it up. We serve operators across the entire state. Financing is available through third-party lenders we work with; we will connect you, but we do not set rates or carry the paper ourselves.
